Tyropita ( Cheese Pie)

1/2 kg (approx 1lb) filo pastry
olive oil
approx 1/2 pint milk
3 tbsp flour
3 tbsp olive oil
5 or 6 eggs
400g (approx 1lb) grated cheese

Heat the olive oil in a pan then add the flour, stirring all the time. Continue gently cooking and stirring for about 5 minutes.
Add the milk slowly, still stirring all the time and cook for another 5 minutes as the mixture thickens.
Remove the pan from the heat and add the beaten eggs and cheese.
Layer an oiled baking dish with half of the oiled filo sheets.
Spread the mixture over them.
Cover with the remaining sheets.
Sprinkle the top with water and bake in a hot oven until golden.
