Squid in Tomato Sauce

1 kg (approx 2lb) squid
olive oil
1 or 2 onions chopped finely
small bunch of parsley, chopped
1/2 kg (approx 1lb) tomatoes skinned and chopped finely.
salt and pepper

To clean the squid wash it and remove the eyes, mouth, 'jelly - like' strip from the back, the ink and the internal organs.
When cleaned, cut it into bite sized pieces.
Brown the onion in oil then add the squid.
Sauté gently for 10 minutes then add the tomatoes, parsley and seasoning.
Continue cooking until the liquid thickens.
