Spanakopita ( Spinach Pie)

1.5 Kg (approx 3lb) spinach
olive oil
1 finely chopped onion
1/2 kg (approx 1lb) feta cheese, crumbled
4 eggs
salt and pepper

for the dough:
olive oil
juice of a lemon
1 teaspoon dry yeast
salt
warm (not hot) water (approx 150ml)
approx 700g plain flour

Make the dough:
Mix the salt into the flour.
Stir the yeast into the water and add the oil and lemon juic.
Slowly add the liquid to the flour until a soft dough is created.
Knead the dough well then cover and leave to 'prove' in a warm place for 1 - 2 hours.

Stuffing:
Wash and chop the spinach.
Add the onions to the spinach and gently sauté them in olive oil for 10 to 15 minutes.
Strain the spinach and onions then add the feta cheese, seasoning and the beaten eggs.

Roll out half the dough and cover the bottom of an oiled baking dish.
Spread the stuffing over it.
Cover it with the other half of the dough.
Brush the top with oil and bake in the oven (approx reg 5) for about 1 hour until golden.
