Pork and Celery

1kg (approx 2lb) pork
1.5 kg (approx 3lb) chopped celery
2 finely chopped onions
olive oil
juice of 2 lemons
salt and pepper

Cover the celery with water; boil for 5 minutes then drain.
Cut the meat into bite sizes pieces and brown them, with the onions, in the olive oil in a heavy based pan.
Add 2 or 3 cups of water and simmer gently for about 45 minutes.
Add the celery and seasoning.
Continue simmering, without stirring, until the water has been absorbed or evaporated. Shake the pan from time to time to avoid burning the contents.
When the meat is tender and the water evaporated add the lemon juice.
