Meat with Chickpeas

(traditionally served as a wedding dish with plenty of red wine!)

1kg (approx 2lb) pork or veal
1/2 kg (approx 1lb) chickpeas (soaked overnight)
olive oil
2 finely chopped onions
1/2 kg (approx 1lb) finely chopped tomatoes

Cut the meat into bite-sized pieces and brown them in oil a heavy based pan.
Add the onions and continue cooking until translucent.
Add the tomatoes and allow the mixture to simmer gently.
Strain the chickpeas and add them to the pan. Cover with fresh water and add seasoning to taste.
Simmer until meat and chick peas are cooked.
