Lentil Soup

1/2 kg (approx 1lb) lentils
olive oil
1/2 kg (approx 1lb) chopped tomatoes
1 finely chopped onion
2 -3 cloves of garlic, crushed
3 bay leaves
3 tbs vinegar
salt and pepper

Fill a large pan with water; add the lentils and bring to the boil. Boil for 10 minutes then drain off the water.
Using a large, heavy based pan, brown the onion in oil then add the lentils, garlic, tomatoes, bay leaves and seasoning.
Cover the mixture with water.
Bring to the boil then simmer for about 30 minutes.
Top up with boiling water, as necessary, to keep soup at desired consistency.
Add vinegar after 25 minutes.
