Lamb in Wine

1kg (approx 2lb) of lamb. Pieces should not be too thick.
olive oil
juice of 1 lemon
approx 1/2 bottle of white wine
salt and pepper

Wash and trim the lamb.
Brush the meat with lemon juice and seasoning.
Brown the meat on both sides in the hot olive oil
Add the wine slowly to the pan and simmer gently until the meat is thoroughly cooked.
