Courgette Balls

1kg (approx 2lb) courgettes
1/2 kg (approx 1lb) potatoes
1kg (approx 2 lb) onions
2 or 3 eggs
250 g (approx 8oz ) grated cheese
salt
olive oil
a litttle flour
(Quantities can be halved to make a smaller number of balls)

Chop the potatoes, onion and courgettes into samll pieces.
Cover them with water, bring to the boil and simmer until soft enough to mash.
Mash, and combine them together well.
Mix in the eggs, cheese and salt.
Shape the mixture into balls, and shake flour over them.
Fry in deep olive oil, on both sides, until golden in colour.
Drain well.
