Baked Fish with Courgettes

1kg (approx 2lb) thick fillets of fish eg cod, sea bass or red snapper.
1kg (approx 2lb) courgettes
1/2 kg (approx 1lb) chopped tomatoes
olive oil
1 finely chopped onion
salt and pepper

Wash the courgettes and slice open lengthways. Sprinkle with salt.
Season the fish and place in the centre of an oiled baking dish..

Lightly fry the courgettes then arrange them round the fish.
Brown the onion; add the tomatoes and cook for 10 minutes.
Add enough water to make a thick pouring sauce
Pour the sauce mix mix over the fish and courgettes.
Add extra seasoning to taste and bake in a moderate oven (reg 4 or 5) for about an hour.
